Blueberry Dump Cake …

A few days ago, I purchased a 2 lb tub of organic blueberries-they were on sale & I could not pass them up. I am a very frugal shopper…so the moment I saw the SALE sign, I knew I was going to buy them! But I digress… I got them home and as I was putting them in the fridge, I remembered the last time I had purchased blueberries…we did not use them all in time and some went bad and had to be thrown away. I do not like throwing anything away, especially food. Food is way too expensive, particularly organic food, to be thrown away. I decided this time would be different. I immediately started thinking of ways to use the blueberries…pancakes was the first thing that popped into my head. The next morning, I was in the kitchen, whipping up a batch of Blueberry Pancakes! I filled each pancake with blueberries, but could tell I would have to make pancakes 24/7 in oder to use up all the blueberries I had…and that was not an option! So, I started looking for blueberry recipes, something I had never made before…that’s how I stumbled across this recipe for Blueberry Dump Cake. What could be easier than a dump cake, you are literally just dumping ingredients into a baking dish and putting it in the oven. Mama likes! I reviewed the recipe I found and realized I had all the ingredients on hand, well, almost all of them…more on that later!  😉 Here is the recipe:

3 C. Blueberries
1 (20 oz.) Can Pineapple tidbits in juice
1/2 C. Sugar
1 box  Butter Recipe Cake Mix (can use yellow or lemon cake mix)
1 1/2 Sticks Butter or Margarine, melted
1 C. Walnuts or nuts of your choice
 
Rinse blueberries and place into bottom of a 9 x 13 baking pan.  Pour pineapple tidbits and juice over the blueberries.  Sprinkle with sugar.  Sprinkle cake mix over the fruit mixture. (You can use a spoon to spread it out evenly) Sprinkle walnuts over the dry cake mix.  Drizzle the melted butter over everything.  DO NOT STIR.  Bake in preheated 350* oven for 35 to 40 minutes until top is brown and cake is bubbly. 
I followed the recipe above, Except I did not have Pineapple tidbits on hand & I did not feel like driving to the store to buy them…so I improvised! I knew I needed some liquid to make the dessert, and I knew I had O.J. in the fridge, so that’s what I used! I measured out about 16 oz. of juice and poured it over the blueberries, then I proceeded with the rest of the ingredients. I also did not add walnuts or any other nut to the dish, I wanted Blueberries-period! I was a bit nervous about how it would turn out, but was pleasantly surprised with the finished product! It was fantastic! The family loved it, could not get enough of it and is already asking for more! It tasted nice and sweet and was a good consistency, not runny at all, which is what I was concerned with. Tastes great with ice cream on the side, or by itself-like I had it!
