Minty Fresh Cantaloupe Popsicles! Paletas! #FreshFinds

I don’t know about you, but on a hot summer day; I like to cool down with something ice cold and sweet. Last year, I made a lot of ice cream & this summer, I’ve been making all kinds of popsicles. My little one LOVES popsicles, so I like to experiment with different ingredients. I don’t think my son even realizes he’s eating fruits (and sometimes veggies!) when he eats my popsicles, he just knows they’re cold, sweet & tasty! That’s all right with me. SONY DSC

This morning, I made Cantaloupe Popsicles! I went to my neighborhood Lucky Supermarket last night, to buy all the items I’d need. photo-253 I like buying produce at Lucky Supermarket because I know it’s going to be fresh. There are lots of fresh finds at Lucky’s! First, let’s go check out the Cantaloupes. photo-257 I always buy the cantaloupe that looks ripe (orange tint to the skin), and smells sweet. Go ahead and pick up the cantaloupe you are thinking about buying and smell it. Does it smell sweet? If not, choose another one. Once I picked out just the right cantaloupe, I headed to the dairy section. photo-261 I got some heavy whipping cream, a can of coconut milk and a couple other things. photo-264 Popsicles are easy to make and it’s a lot of fun to try different fruit combos. Experiment with different fruits and see which ones work best for your popsicles. Minty Fresh Cantaloupe Popsicles
Yields 12
These refreshing cantaloupe & mint popsicles will quickly become a favorite in your home.

Ingredients
  1. 1 cantaloupe cut into cubes
  2. 1/2 cup whipping cream
  3. 1/2 cup coconut milk
  4. 1 sprig mint, approx 6-8 leaves chopped up
Instructions
  1. In a blender, blend together all the ingredients until cantaloupe is no longer lumpy.
  2. Pour blended mixture into popsicle molds.
  3. Place in freezer for 2-3 hours, until popsicles are completely frozen.
  4. Remove popsicle from freezer one at a time to eat. Enjoy!
Notes
  1. You could add 1/4-1/2 cup sugar to mixture in blender, if needed, just depends on sweetness level of cantaloupe.
