If you’re like me, I’m always looking for quick family meal recipes. Every day, I’m faced with the same question: What to cook?! I enjoy making my meals from scratch, but sometimes, I just don’t have time to cook an entire meal from scratch. There’s not enough hours in the day to accomplish everything on my “to do” list, so I try to cut corners when I can.
I recently visited Walmart, and picked up a package of Kraft Recipe Makers. I like to use “ready-made-meals” because it cuts down on prep time. All the ingredients I needed to make the Sweet & Sour Chicken were listed on the back of the box: I took it one step further, and added sliced mushrooms and baby corn. (I like to make recipes my own, by adding extra ingredients!) I also used Uncle Ben’s Ready Rice, Jasmine, to be exact. I was able to omit “Step 1” on the back of the box, because my rice was already cooked!
As you can see from the directions on the back of the box- this recipe is easy-peasy to make. You don’t have to slave over a hot stove for hours, to make a delicious family meal. The picture below was taken right before I added the pineapple, which is one of the last ingredients you’ll add. And here’s one taken right after the Sweet & Sour Pineapple Finishing Sauce & pineapple were added: This was one of the best family meals I’ve made from a meal kit. The flavor was pretty authentic. Family LOVED it, even the picky teenager! He said, “This is really good, Mom!” I had to do a double-take, because I thought he might be pulling my leg. I was pleased to see him chowing down when I turned to look at him! The photos below are of my little one’s plate. He didn’t want a lot of sauce on his plate… so I didn’t really add any. One of the great things about this meal is that you can add as little or as much sauce as you want over the food!
- 1 cantaloupe cut into cubes
- 1/2 cup whipping cream
- 1/2 cup coconut milk
- 1 sprig mint, approx 6-8 leaves chopped up
- In a blender, blend together all the ingredients until cantaloupe is no longer lumpy.
- Pour blended mixture into popsicle molds.
- Place in freezer for 2-3 hours, until popsicles are completely frozen.
- Remove popsicle from freezer one at a time to eat. Enjoy!
- You could add 1/4-1/2 cup sugar to mixture in blender, if needed, just depends on sweetness level of cantaloupe.
