In honor of National Hispanic Heritage Month, I thought I’d whip up a little something using Peanuts! You might not know this, but peanuts originated in South America & are used to prepare many Latin foods…like Chicken Mole, so delicious! I decided on Pancakes!
Let’s be honest, we’ve all got a lot on our plates, so to speak. Taking care of our families, work, and all the extra activities, like the kid’s sports… can take a toll on us. We need to make sure we are getting plenty of rest and eating properly. I don’t always get enough sleep or eat the right things, but I’m trying to do better, for me and my family. That’s why adding peanuts to our diet makes perfect sense. Peanuts have 7 grams of energy-boosting protein per serving. That’s more than any other nut. They also have 30 essential vitamins and nutrients, and are considered a Superfood! When you look at the value, nutrition, and flavor of peanuts and peanut butter, you’re getting a lot of bang for your buck… and I’m all about that! Peanuts and peanut butter provide long-lasting energy. They also help curb your appetite by making you feel full longer. You can snack on peanuts & peanut butter any time of the day or night. They’re an affordable source of protein and convenient. I like to throw a few packs of peanuts in my purse, they’re great for a snack when I’m running around with the kids. We also add peanut butter to breakfast smoothies, helps us start the day on the right foot. We (like most people out there!) LOVE peanut butter and jelly sandwiches. My oldest actually took PBJ sandwiches for lunch the entire time he was in elementary & middle school! Most of high school too! It’s all he would eat.
Nowadays, I like to make Peanut Butter Buckwheat Pancakes for breakfast. Don’t they look good? I use peanut butter AND peanuts!
- 3/4 Cup Buckwheat Pancake Mix (I used the Hodgson Mill brand)
- 1/2 Cup Milk (I used fat-free organic milk)
- 1 egg
- 1Tbsp oil
- 1/2 Cup melted Peanut Butter (You can melt it in the microwave, and I used Creamy Jiffy)
- These delicious pancakes, rich in whole grain & protein, will become a family favorite in your home! If you love peanut butter, you'll love these!
- I added crushed peanuts to the top of my pancakes after they were prepared. You can do the same or choose to omit them. Either way, your pancakes will be delicious!
