Those of you that have been following me for a while know that I love football, my family loves football & game days are a time to celebrate up in chea! My love of the game goes way back- I grew up watching the Dallas Cowboys & Houston Oilers in Texas. Our high school football team was the baddest team around (Go Huskies!), we won just about every game we played, and by win I mean we destroyed our opponents with scores of 56-0 … no lie! My freshman year, Jimmy Hawkins was a Senior & he was on Fiah! He’d run the ball 50 yards up the field for a touchdown, change shoes in the blink of an eye & then kick the extra point. It was glorious! He went on to play in the NFL & last I heard he was a football coach at the Air Force Academy in Colorado. Jimmy was one of several players at my high school to play pro ball.
So yeah, whether it’s high school, college or pro- I love me some football.
I also like sharing my love of the game with those I love. It’s a blast having friends & family over to watch a game or two on the weekends. What’s not a blast is having to cook for everyone. I want to watch the game too, not be stuck in the kitchen, so I try to keep things quick & easy when planning my game day menu. That’s where Foster Farms steps in to help this Mama out. Hubby likes spicy food, me not so much (unless it’s Indian, then I’ll suffer through the heat, lol. FYI, a tall glass of milk takes the burn away). He enjoys Buffalo anything, so I bought some 100% Natural Buffalo Style Breast Bites for the game this past weekend. I can’t beat the convenience: heat the oven to 400*, place the frozen Breast Bites on a baking sheet, pop in the oven for 15-20 minutes & you’re good to go! I like to put toothpicks in them before I serve them, makes it easier for everyone & like I said before, finger foods.
I like making & eating salads, so I decided to throw one together and add the Buffalo Style Breast Bites as my protein component. I kept it nice & easy, with just a few ingredients.
- Foster Farms Buffalo Style Breast Bites (4 bites)
- 1 stalk celery, diced
- 1/4 purple cabbage, diced
- 2 handfuls baby spinach
- 2 peach halves, diced (canned peaches)
- Heat Foster Farms Buffalo Breast Bites as per directions on bag.
- Allow to cool slightly, then dice 4 bites.
- Add celery, cabbage, spinach, & peach halves to salad bowl.
- Top with Foster Farms Buffalo Bites to top of salad.
- Enjoy! Increase ingredients to make larger salad.
Everyone was happy, the fellas had their hot & spicy finger food, & I had my super yummy salad … with a large mug of ice cold milk to wash it all down! Add some cookies, chips, drinks & you got yourself a game day party.
