What?! It’s Cinco de Mayo already? Where has the time gone? You guys know I’ve shared lots of authentic Mexican recipes here on my blog. (Just do a search on Rumba Meats, and they’ll pop up for you.) Some of those recipes, while amazingly delicious, can be a bit time-consuming to prepare. Today, I’m going to share 15 Cinco de Mayo recipes with you. These recipes are from fellow bloggers, and won’t take quite as long to make.
These recipes are pretty quick to whip up. I’ve got grilled corn (elote), enchiladas, Pico de Gallo, Tex-Mex, refried beans, dulce de leche ice cream, and more!
