I recently teamed up with Immaculate Baking and I’m taking part in the Immaculate Baking Blogfest. Yay! What I like about this company, is that they offer organic, gluten-free & non GMO products. For my first post; I decided to make something quick & easy, that everyone can do.
I bought the Immaculate Baking Gluten-Free Chocolate Chunk Cookie Dough & the Gingerbread Spice Cookie Dough.
I didn’t really know what I was going to make, until the mercury started to rise-then I knew… Ice Cream Sandwiches! Woo-Hoo! They are easy to make & everyone loves them. I wanted to incorporate a little July 4th theme, so I dug out my star cookie cutter and some red & blue crystal sprinkles. I chose the Gingerbread Spice & used the cookie cutter before putting them in the oven.
That didn’t work out very well, the dough spread too much and the star ended up looking more like a star flower! Next batch I put in, I made sure to just flatten the dough out (4 dough balls are enough to make one star) and used the star cookie cutter after it came out of the oven. That worked much better! Yay! Now it was time for the Gluten-Free Chocolate Chunk Cookie Dough. I did not use the cookie cutters for these-I just put them in the oven & let them bake. Once they were done, I let them cool off for about 20 minutes. I got the vanilla ice cream out and scooped some onto a cookie, then topped it with another cookie. I sprinkled red & blue sprinkles on them. I then put them all back in the freezer for awhile. It’s crazy hot here right now & they were melting right before my eyes. After a few minutes in the freezer, I took them out to take some photos. Most of these are already starting to melt, but you get the idea… I hope! (The “star flower” can be seen on the lower right hand corner!) You can see the ice cream melting! I hope you try these, they are easy to make & your family will LOVE them! Happy 4th of July!
