Jan. 6th is Three Kings Day. On this special day, I like to make something special for breakfast. You can’t go wrong with Pan Frances Con Canela y Vainilla (French Toast w/Cinnamon & Vanilla)! photo-480
Three Kings Day (or The Epiphany) is a Christian holiday that celebrates the biblical story of the three kings—Melchior, Caspar, and Balthazar. The three kings (also known as the Three Wise Men or Magi) followed the bright star of Bethlehem to bring gifts to the Christ child.

In Latin America, kids dress up in king costumes and go door to door in their neighborhoods singing carols in the days leading up to Three Kings Day. In Argentina, sweet wine, fruits, and milk are left outside for the three kings and their camels to enjoy. In France, folks eat Galette des Rois, or “King Cake,” which has a trinket or bean hidden inside of it. The person who gets the piece of cake with the trinket becomes “king” for the day!

Three Kings Day always falls at the end of Christmastide—also known as the Twelve Days of Christmas! Traditionally, this is the day when Christmas trees and decorations are taken down. Happy Three Kings Day!photo-477photo-478

Now let’s get to the recipe, shall we?! 

Pan Frances Con Canela y Vainilla (French Toast w/Cinnamon & Vanilla)
Delicious French Toast- easy to make & oh-so-yummy!

Ingredients
  1. 2 slices of bread, preferably thick
  2. • 2 eggs
  3. • 1 cup skim milk
  4. • 1/2 teaspoon vanilla extract
  5. • 1/2 teaspoon ground cinnamon
  6. • 2 teaspoons sugar
Instructions
  1. Put the eggs, milk, vanilla, ground cinnamon and sugar in a large bowl and whisk everything until frothy.
  2. Dip one slice of bread into mixture, lift out of mixture, and place onto hot pan.
  3. Cook for approx 2 minutes, then turn over with spatula.
  4. Cook other side for approx 2 minutes, or until lightly browned.
  5. Once browned on both sides, remove from pan & place onto plate.
  6. Enjoy!
Notes
  1. You can sprinkle powdered sugar over the top of the French Toast, if you'd like...but it's not necessary. Syrup is also optional, but I love mine with sugar & syrup!
  2. If you'd like to omit the sugar in the mixture- that's fine, the syrup will make up for it.
