Avocado Berry Salad {Recipe}

September 15, 2015 marks the start of National Hispanic Heritage Month. You know what that means … Fiesta time! I love a good party and this one’s gonna last a whole month! I like to take advantage of every chance I get to celebrate my Latina roots and pass those traditions on to my kids. My Mom did the same with me, she made sure I knew about my culture and my people. Growing up biracial, I never felt like I didn’t know who I was- I have my Mom to thank for that. 

I plan on celebrating National Hispanic Heritage Month by cooking up some of my favorite dishes. I enjoy cooking meals my Mom used to cook for me when I was a child. I want my kids to know their heritage & food plays an integral part in that. 

At the same time, I want my kids to grow up healthy. Did you know Latinos are twice as likely to develop Type 2 Diabetes than non-Latinos? Diabetes runs in my family-it also runs in my husband’s family. Eating healthier and exercising is a must for me & my kids, not an option. I’m constantly trying to incorporate healthy food options into our diet. One of those choices is something I grew up on: Hass Avocados

Diets rich in foods containing fiber can potentially reduce the risk of developing Type 2 Diabetes. Avocados have 8% of our daily recommended amount of fiber per serving. They’re also cholesterol free and contain “good” fats. Bad fats raise our cholesterol levels, so we all need to add more good fats to our diets. Maintaining a healthy weight & keeping our cholesterol levels in check are extremely important in the fight against diabetes.

Avocado Berry Salad
Healthy & delicious, this salad doesn't even need dressing!

Ingredients
  1. 1 small pkg fresh Baby Spinach
  2. 1 small can mandarin oranges
  3. 1 small pkg fresh strawberries
  4. 1 avocado
  5. handful of walnuts
Instructions
  1. Wash your spinach, then add to salad bowl.
  2. Drain mandarin oranges and add to spinach.
  3. Wash & slice strawberries, add to bowl.
  4. Peel & slice avocado- place on top of salad mixture.
  5. Top with walnuts
Notes
  1. I don't use any salad dressing for this salad, the water from the oranges and the creaminess of the avocados are enough for me. You may add dressing if you prefer.
