School is back in session here in the San Francisco Bay Area. Our alarm clocks are set & everyone is getting up bright & early. I’ve completed all my back-to-school shopping and we’re trying to get back on our school schedule. I say all “my” back-to-school shopping because the kids aren’t the only ones starting a new school year, I am too! I’m a Substitute for the school district and have been called in to work quite a few times already.
It’s been super busy around here. Soccer season is revving back up, which means practice every other day & games every weekend. I’ve been invited to attend numerous blogging events, which means I have to rush home after work, get ready & zip back out again. WAIT! What about dinner? We still need to eat, right? Prepare
The key to doing anything successfully is preparation. If I know I have something planned, like an event I must attend, I try to prepare something for dinner the night before. I’ll stay up all night making dinner for the following day. Why? Because I know when I get home after a long, hard day- I’m not going to be in the mood to cook anything. But life as a Sub is different. I don’t always know when I’ll be called in to cover for someone. Sometimes I get called in at 7:45am, and school starts at 8am! Foster Farms is a lifesaver on days like that. As long as I have some Foster Farms goodies in the freezer, I know everything is gonna be ok.
Tonight I made Chicken Fajita Burritos, and everyone loved them. I used the Foster Farms Saute Ready Chicken Fajitas and our meal went from freezer to table in under 30 minutes. First, I sliced up red, yellow & green bell peppers and onion. Then I added a dollop or two of plain yogurt (I use that instead of sour cream,) & a scoop of guacamole on the side. I always have tortillas in the fridge (my Mama taught me well). This meal is quick, easy & tasty. Did I mention it’s quick?
Don’t get me wrong, I love cooking for my family- but after a long day at work I don’t want to spend hours in the kitchen preparing dinner. Foster Farms lets me make quick meals my family loves in under 30 minutes. I give them an A+.
