Blackberry Vanilla Yogurt Parfait, With Homemade Granola And Honey

BlackBerry yogurt parfait

I love to eat yogurt and fruit together. The combination is refreshing and delicious. This blackberry & yogurt parfait is perfect for breakfast, after lunch as a treat, or to serve for dessert. It’s easy to make, and can be made ahead, for those times when you just need to grab something and go. Isn’t it gorgeous? Who knew yogurt could look so good! 

 

Here’s what you’ll need:

1/2 pint Blackberries (fresh, organic)

Vanilla Yogurt – enough for 4 servings

Organic honey – 4 Tablespoons

FOR THE GRANOLA

2 cups Quick cooking Oats

1/2 cup Brown sugar

1 teaspoon of Cinnamon

1/4 cup Golden Raisins

1/2 cup of Organic Coconut

1 teaspoon of Butter

1/2 teaspoon of Vanilla

MAKES 4 INDIVIDUAL SERVINGS

 

Here’s what you do:

First, make the Granola. Line a cookie sheet with parchment paper, and place all ingredients for the Granola on the parchment paper.  Mix altogether until well blended, and spread out to a single layer.  Bake in the oven at 350 degrees for 10 – 15 minutes, or until Oats and Coconut are golden brown  (Oven temperatures vary, it may take a few minutes longer in some ovens). Keep an eye on the Granola, making sure not to burn the edges.  Allow to cool for 30 minutes. (FYI: Now that I’m living with diabetes, I use much less sugar to prepare this, so feel free to tailor it to your needs.)

Place Yogurt, blackberries and honey in a blender, and pulse, just to bend all ingredients. Add 2 cups of the granola to Yogurt mixture, and pulse again a few times to blend  Pour ingredients into desired container (i.e., plastic to go container, small glass, etc), top with a fresh Blackberries, and place containers in refrigerator.  Chill for about half a hour before serving.  If you have granola left over, you can sprinkle on top just before serving, for a great crunchy treat.  Enjoy!
