Caramel Peanut Butter Bars {Recipe}

Oh my gosh, these are so delicious! They’re easy to make, no bake, and are a scrumptious dessert. You can serve these on a buffet table, or put them in little bags for special treats. They’re gooey, and crunchy, and everyone will love them. They would even be a great treat for a road trip, or after school snack. You can’t go wrong with these bars, no matter when you serve them. Sure to become a family favorite!

HERE’S WHAT YOU NEED:
6 cups of Rice Chex Cereal
1 cup of pretzels – crushed
1 1/2 cups of brown sugar
1 1/2 cups of corn syrup
1 1/2 cups of peanut butter
2 Tablespoons of butter
1 Tablespoon of vanilla
1/2 teaspoon of salt
10 ounces of milk chocolate chips

HERE’S WHAT YOU DO:
Line a 9 X 13 inch baking dish with parchment paper, and set aside. In an extra large bowl, combine the Rice Chex, and crushed Pretzels, and set aside. (Crush pretzels in food processor, blender, or by hand, just until they’re in small pieces.) In a 4 – 6 cup measuring cup, stir the corn syrup, brown sugar, and butter, and place in the microwave on high for 2 -3 minutes, until bubbly. Remove from the microwave, and stir in the peanut butter, vanilla, and salt. Place back in the microwave for 30 seconds. Stir the mixture, and then pour over the cereal and pretzels, then stir to coat evenly. Pour the coated cereal and pretzels into the 9 X 13 dish, spread out evenly, and press into dish. Let the mixture cool to room temperature. When the mixture is cool, melt the chocolate chips in the microwave on 15 second intervals, stirring in between, until chocolate is melted. Pour the melted chocolate over the top of the caramel cereal bars, and let the chocolate harden, or set on the bars. When the chocolate is set, cut the bars into 2 X 3 inch pieces, and place them in an airtight container until time to serve.

Tip: I added red & pink M&M’s to make this a cute Valentine’s Day treat. You can add whatever color you want, or omit them all together.
