Milk & Cookies for Everyone with a2 Milk®

OK, so everyone who knows me knows I LOVE MILK! I’m a self-proclaimed milkaholic. Some folks drink wine, I drink milk, that’s just me. What everyone doesn’t know, is that sometimes milk doesn’t love me back. As I’ve gotten older, I’ve noticed milk tends to make me bloated. I gave up milk a while back, because I was on a special diet & one of the things I noticed was less bloating. When I went back to my normal diet & milk consumption, the bloating returned. 

I’m not alone, an independent study showed 1 in 4 Americans have discomfort after drinking milk; yet only 5-7% of the population has been clinically diagnosed as lactose intolerant.  I contemplated giving up milk all together, but knew that wasn’t really an option-I just love it too much. Oatmeal Cranberry Cookies! 

1 cup unsalted butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups rolled oats
1 cup dried cranberries

Directions
Preheat oven to 350 degrees. Cream butter and sugars until fluffy. Add eggs and vanilla. Combine dry ingredients. Add to butter mixture and stir until well blended. Add dried cranberries. Drop by teaspoonful onto baking sheet. Bake about 10 to 12 minutes, or until lightly golden. Remove from oven & let cool.
