How to make tripas

The tripas I made yesterday came out perfect! I know my Mom is smiling down on me from heaven, saying, “That’s my girl!” She taught me well. Everything I know about preparing delicious, authentic, Mexican meals; I learned from her. By watching her cook, and asking questions, I learned to cook the meals she cooked for me, when I was growing up. It was important to her to teach me about my Mexican heritage. Its important to me to carry on the tradition, by preparing delicious meals for my family.

Tripas Tacos are delicious! This authentic Mexican recipe was handed down to me by my Mother, Rose. She took great pride in preparing all our meals, and made everything with love.

Ingredients
  1. 4 Lbs Rumba Meats Tripas
  2. 1 teaspoon salt
  3. 3 tablespoons vegetable oil
  4. Pico de Gallo to taste (diced onion, chopped cilantro, diced tomatoes)
  5. 1 pkg corn tortillas
  6. 1 lime
Instructions
  1. Remove Rumba Meats Tripas from package and quickly rinse under running water in sink.
  2. Put them in a large skillet and add enough water to completely cover them. Cover the skillet and simmer on low heat for one hour.
  3. After one hour, check to see if they are soft. If so, remove the Tripas from the skillet and place on a plate. Let cool for about ten minutes. If not soft, continue to simmer for another 30-45 minutes.
  4. Cut the Tripas into bite-size pieces.
  5. In a clean skillet, add your cooking oil and turn the heat to medium. Once the oil gets hot, add the bite-size pieces of Tripas.
  6. Fry the Tripas for about 15 minutes, longer if you prefer crispy Tripas, I like mine soft. Sprinkle salt over cooked Tripas.
  7. Warm your corn tortillas. Fill tortilla with Tripas, garnish with Pico de Gallo, squirt some lime juice onto the Tripas and enjoy!
Notes
  1. FYI: This makes about 12 corn tortilla tacos. Tripas shrink in size once they are cooked. I usually make one pound per person. I like to add sliced avocado to my tacos sometimes, totally your choice to add or not.
